We’re continuing the pleasure this month with a trio of Autumn-inspired recipes. Cook them separate or together, either way, they’re going to make you happy. Guaranteed.
Each recipe is listed below, along with a photograph and a printable PDF of the recipe. This collection is designed to gently welcome autumn into your kitchen (spoiler: there’s no pumpkin pie spice involved) but instead, leans into warm, autumn flavors that are still vibrant, rich, and lovely. This month, we’re featuring:
Fried Apples
Though it’s not a complicated recipe, this one feels like home. It’s a really beautiful way to serve up something that everyone knows and is familiar with; but maybe they’ve never enjoyed it in such a way before. It’s delicious served with a scoop of vanilla ice cream or sweetened mascarpone, but truth be told, we eat them just like this. Don’t forget that you can easily reuse your tallow many times so even though the recipe calls for a lot, it can be saved in the refrigerator many times over for frying various foods.
Ham & Cheese Galette with Béchamel
This dish is simple in its flavors, but incredibly comforting and welcomed on the breakfast, lunch, and supper table alike. For supper or lunch, I serve a generous slice of the galette with a simple green salad and a glass of chilled wine. For breakfast, I serve it with fresh fruit and yogurt on the side.
Italian Pantry Soup
This is my get-out-of-jail-free soup because it requires almost no effort on my part, as all of the ingredients come from my pantry. The only thing I have to make sure I do is have a good Italian sausage on hand (I keep this in my freezer in small packages for such occasions). If you need to feed a crowd, this recipe can be easily doubled (or tripled) and is very warming, welcoming, and easy on the cook.
