Hello my friends,
I know we’ve all been scattered around this summer, doing exactly what we should be doing which is living life! There are have been trips to the river, late-night movies, glasses of wine with friends in the garden, quick trips up into the mountains, hikes, swimming sessions, and plenty of delicious food. And it’s not quite over yet!
Still, for many of us, the end of August/beginning of September means that we’re having to put a bit of structure back to our days as we begin to work, school, and live on a slightly more defined schedule. I’ve got mixed emotions about this currently, but I am grateful that regardless of where this email finds you currently, you’re still in need of some delicious food.
As I’ve said before, it’s not complicated. But it does require some planning. For example, if I’ve got a particularly busy week, sometimes I begin my week but cooking up some chicken breasts or poaching a few chickens for easy-protein. I’ll often hard-boil eggs in large batches and make a little extra of whatever we’re having for dinner to account for a quick-lunch the following day.
I’ve tried to some of the thinking and planning for you this month - laying out ten days of breakfast, lunch, and dinner for you. Recipes and flavors that will keep you satisfied and excited. I hope you enjoy as we gorge ourselves on end-of-summer produce! (Note: I know that eggplant isn’t for everyone, but I’ll probably sneak it into almost every entree we’re having this month in one-way-or-another).
