Hello my friends,
If you came to my kitchen in real life, you’d find that I’m fairly uninterested in traditional Thanksgiving and holiday foods. I’m much more interested in foods with a bit more life and spunk… be it a spicy tomato sauce, strong pickled flavor, or tons of cilantro and lime juice. Ya know, food that dances a bit on your tongue.
I try to play by the rules when I host Thanksgiving… happily serving up turkey confit and mashed potatoes… but the day after, I want something else.
If you subscribe to our monthly menus, you’ll notice a dish that comes up over and over and over again. Warming Thai soup. This is a richly flavored soup that’s so simple and is one that you’ll find on my table almost weekly during this time of year.
It’s aromatic, clean, and wildly satisfying. Though I most often make mine with quickly-made homemade coconut milk, you can easily substitute in four cans of coconut milk for an even quicker and simpler version.
