Hello my friends,
First off, I’m going to need people in the comments section on YouTube to chill out just a little bit mmmkay? It’s always assumed when raw meat is involved that I never wash my hands, the utensils, or surface areas which is just plain silly. Of course I do! But alas, hand washing doesn’t make for high-quality viewing material. Now I know why all those network shows always show people washing their hands…
But let’s put aside the hand-washing for a minute.
We’re talking all about the chicken in this week’s new video - how we stretch a whole chicken to multiple meals and then make use of what’s leftover to produce one of the most healing and wonderful foods on the planet. We’re talking home economy and high quality. We’re talking homemade chicken dinner.
And YES. I washed my hands plenty.
Also worth noting, however, that when you source high quality ingredients like the chicken we’re using in today’s video, the methods in which the chicken was raised and butchered have a lot to do with food safety. Do you feel confident with your chicken supplier? Do you know the process of how the animal is born? Raised? Fed? Butchered? Processed?
Is the surface bleached? (Yes, that’s a thing.)
Is it injected with water to increase weight? (Yes, that’s a thing too.)
Is it kept “fresh” with injected preservatives like sodium lactate and potassium lactate? (Another common practice.)
Is it injected with bromelain and ficin to tenderize the meat? (Yet another typical practice with commercial chickens).
Shop Porter Road chicken & other high-quality meats right here.
We talk about this a lot in today’s video: how we balance it all, source the best we can at the moment, and make something delicious and nourishing.
Let’s make some chicken dinner together!
Much love to you all - have a wonderful weekend!
Cheers,
Shaye
Oh youtube commenters. 🤦♂️
