Summer is here in all its hot, golden glory. The joke is often that it's too hot to turn the oven on... but there is never (I repeat, never!) a day when my oven isn't on. There's never a season without baking. And there's never a season without my favorite ancient grain: EINKORN.
That's exactly why we're hosting an Einkorn workshop next month.
If you've never encountered Einkorn before, let me paint a picture. Imagine a grain, an older, much-loved parent of our modern wheat, full of nutritional goodness (like higher protein!), and with a unique flavor profile that will make your baked goods simply irresistible. Einkorn is flaky, buttery, and has a genuine depth of flavor.
Einkorn is unchanged and has never been hybridized. Because of this, its gluten structure is weak, offering potential relief to those who have gluten intolerance or prefer to limit their gluten intake.
But this ancient grain (which many find easy to digest) requires a little bit of learning in order to manage it well in your kitchen. Don't worry - once you know the general principles, you can use einkorn for all kinds of recipes!

Mastering baking with einkorn flour: We'll journey through recipes that showcase the unique appeal of this ancient grain.

A recording of the workshop, after it's finished, for you to rewatch and reuse as many times as you need and/or if you can't make the workshop live.
This workshop will take place on July 20th, 2023 from 9 am - 12 pm PST. As always, it will be an intensive session of cooking, learning, and the shared joy of baking that will run for three hours on ZOOM. It’s a chance for us to cook together, ask questions, and form a close-knit community of bakers venturing into the realm of ancient grains!
To maintain our intimate learning environment, Einkorn Baking will be limited to 20 participants and quite a few of those spots are already spoken for.
