Hello my friends,
It’s all theoretical, of course, that I would run out of time to cook supper. That I would find myself staring at an empty stove unsure of what the future holds for the next 20 minutes but knowing that somehow, someone needs to feed these beautiful people that call our house home. It’s not that I don’t love cooking for them - obviously, I do.
But that doesn’t mean there aren’t those days when I would trade ALMOST anything to have take-out show up at my door.
But who am I kidding.
Take-out doesn’t deliver this far and sadly, the quality of the food has gone so far downhill one would be much better off to just scramble an egg and call it a day.
We’re working hard at schooling the children right now which means that there are many hours a day devoted to cursive and math and reading and history. It is a beautiful and fruitful time for our family as the kids grow and shape and move into older versions of their wonderful little selves. We have fought hard over the years to protect our family time, our family culture, and our family table.
Education, like food, is never an afterthought.
Still, there are days when supper needs to get on the table a bit faster. So here are a few of my go-to recipes when I’ve got 20 minutes or less.
I’m going to be using the delicious and very underused Bavette steak for my meals but you can easily substitute in flank steak, flat iron steak, or skirt steak. Because of the nature of how we cut up the taco and cheesesteak meat, you could even use the lean and slightly tough round steak. Point is: there’s lots of options.
I have learned over the years that it’s best to have a few pieces of meat, like a Bavette steak, on hand. It can be a bit of money up front to bring a large piece of meat into the house, but if you crunch the numbers, it still makes a lot of sense monetarily compared to eating take-out or fast-food. The nutrition of a high-quality piece of meat is exceptional to boot.
I source some of our meat that we don’t produce, run out of too quickly, or simply want more of from Porter Road. They have a great online catalog of chicken, beef, and pork products to choose from. Since we are no longer raising our own pigs, their bacon and sausage is an absolute must! And the chorizo. My oh my. You can shop Porter Road products here.

THAT is what you de with bevette steak? Yum! Time to dog that I know package out of my freezer lol 😂 so many cuts that I know nothing about. Any way to cook tongue without having to peel it? My x-vegetarian self just can’t get over that one.
