Got summer fruit? Make this.
I know it’s only Monday, but it’s summer. And the garden knows no calendar, no rules, and has no respect for proper work schedules. So when a glut of strawberries, cherries, and apricots arrived at my doorstep via my wonderful organic farming neighbor, I had to put my work schedule aside, and set about exploring new preservation options.
It’s not that I don’t love jam. I do. I really, really love jam.
I also love dried fruits. And fruit butters. But part of my goal this year is “elevated preservation” - that is, preserving foods in a way that brings absolute culinary pleasure.
There’s a place for utilitarian preservation. But when in Rome, it’s worth it to make something that you’re actually excited to eat when the time comes.
I’m sure I’ll be pleased as punch to open up a pint of orange blossom, honey-sweetened strawberry gelato in February.

Homemade Gelato
1.5 pounds of prepared summer fruit
7 tablespoon whole milk
7 tablespoons sweetener of choice, divided
Vanilla extract, orange blossom flower water, rose water, almond extract, etc.
